Kelly’s Grateful Hefe

We just brewed my Hefeweizen a couple days after Thanksgiving, so we’re calling it Kelly’s Grateful Hefe.  It’s the first one that we used a yeast starter on, and it’s amazing how fast it started fermenting.  I woke up in the middle of the night hearing the airlock bubbling, and it was going so fast that I thought it was the cat throwing up.  So, we definitely recommend using a good yeast starter.  Andrew will probably make a post about that sometime soon, but you can get a starter kit from Northern Brewer, or you can make one yourself for much cheaper.
